This summer I’ve been enjoying different kinds of warmed cheese served alongside fresh herbs as a garnish or salad. Tonight I plucked off several leaves of fresh sage and wrapped them around a wedge of brie, secured them around the cheese with cooking twine, then grilled the brie over waning coals (about four minutes on each side; flip very gently!). Once on the serving board, I cut away the twine, drizzled with just a hint of extra virgin, and scooped the melty, savory chunks onto crackers. Yum!
