Parmesan Cookies

These simple, savory cookies need no hype or fanfare. Just four ingredients and about 20 minutes.


125 grams (1 stick plus 2 Tbls) salted butter, softened
125 grams (1 cup) flour
130 grams circa (1 cup) Parmesan cheese, grated
3 Tbsp whole milk


Heat the oven to 175° C / 350° F.  Finely grate about half the cheese and the other half medium-fine (to arrive at a full cup). Using a fork, combine the butter, flour, and cheese until crumbly. Add the milk one tablespoon at a time and combine with a wooden spoon until a dough starts to form. Transfer to a flour-covered board and knead lightly until the dough is smooth and uniform. Cut into two equal portions. Roll the dough into cylinders about 1 & 1/2 inches in diameter. Slice into 1/4-inch thick medallions and bake on a non-stick baking sheet for 10 to 12 minutes or until the cookies just turn golden.
